This Coffee Breakfast Smoothie is the perfect solution to a busy morning.

You know those rushed mornings where you have no time to do anything? Ugh, me too. They happen more often than I'd like to admit. Nothing flies out of the window faster than routine when you wake up late or are faced with a morning issue that demands attention.

This weekend we had exciting plans to attend a birthday party at the zoo and were running late. I had no time to make myself breakfast or even have coffee. Let me just say that mama without coffee is not a very happy mama to be around. This scenario should be avoided at all costs. Trust me.

I knew I absolutely needed to eat. My body is used to being fed first thing in the morning. I do not function well on an empty stomach... and I get cranky. I also knew all the greasy, naughty zoo foods would tempt me way too much if I showed up starving. In a panic with no time whatsoever, I had a crazy idea.

I decided to throw a cup of coffee and a breakfast in the blender so I could drink my coffee AND eat my breakfast in the car on the way to the zoo.

At the time I was chucking everything in the blender, I didn't even care what it was going to taste like, I just knew if I didn't eat or have my caffeine, shit was going to get ugly... and no one wants an irritable, ugly mama walking around with them all day at a much anticipated family event.

Well, guess what? It was super yummy! I could not believe it! I've actually made it four more times in the last three days. It will definitely be my go-to breakfast on hurried mornings. But I gotta tell you, I will be making this deliciousness even when I have all the time in the world!

Btw, if you don't have a blender that can crush ice, you might want to think about putting it on your Christmas list. It'll make smoothies in a flash. I love my Diamond Blender by KitchenAid. It's amazeballs!

COFFEE BREAKFAST SMOOTHIE

Low-Cal Coffee Smoothie

Makes one 24 oz smoothie OR two 12 oz smoothies.

WHATCHU NEED:

  • 1 Cup of COFFEE (Black)

  • 1 Very ripe BANANA (w/ black spots)

  • 1 cup ALMOND MILK (or preferred milk)

  • 1/2 cup PLAIN GREEK YOGURT

  • 7 ICE CUBES (will be mixed in blender)

  • 4 STEVIA PACKETS (or preferred natural sweetener)

  • BLENDER (one that can crush ice)

NOTE: If you are using a frozen banana, you won’t need as much ice cubes. Add a few at first and keep adding until you reach your desired consistency.

WHATCHU DO:

  1. Mix all ingredients in a blender and puree/liquify.

  2. Serve over ice.

Tips:

  • To save even MORE time, you can make this the night before and have it in the refrigerator waiting for you! Just give it a quick stir before drinking.

  • If you'll be storing a make-ahead smoothie in the fridge, wait until you are going to drink it to put it on ice.
