Okay, the original name for this recipe was Bean Salsa. Well let me tell you something, once you taste this there is just absolutely no way to call it that ever again. Can't happen. Ever

After a few bites you already know you're going to need rehab for this stuff. I'm not sure what kind of devil magic occurs once all these ingredients are mixed but make no mistake about it... magic does indeed happen.

Let me tell you how Crack Salsa came into our lives.

My hubs Jay and I were hiking with some friends and after hitting trails all morning, it was time to eat lunch. Our friend Cindy pulled out a vat of this bean salsa. Now you must understand that my husband does NOT like beans. Quite honestly, I'm not a huge fan of them myself. I thought it was strange that Jay even tried it but he said he was starving and it was the first food on the picnic scene. 

Well folks, my husband pulled that vat of bean salsa right under his face and started shoveling it in like a wild animal. He wasn't even coming up for air nor could anyone even get near it because he had claimed it as his own. I was shocked. Jay is not a foodie by any means. I'd never seen him act that way with food before and my God, it was just beans! What in the hell was going on?

Finally I batted his hands away from the bowl and grabbed a tortilla chip and shoved a scoop of this stuff in my mouth. My eyes got as big as saucers. OMG that is SO good! I stopped what I was doing, pushed Jay over, and shoved my face in those magical beans. I renamed that bean salsa right then and there.

CRACK SALSA. We were hooked for life.

Since that day several years ago, I can tell you that we have gotten dozens upon dozens of people hooked on this supernatural dish. It has now gotten to the point that when I bring it to a picnic or function, I have copies of the recipe with me. So... I thought it was about time that I took it to the next level and got the rest of you hooked as well. And now I don't have to print our recipes for anyone, I send them the link! Ah, technology... helping people get addicted.

This Crack Salsa is highly addictive! Not only is it out-of-this-world delicious but it's also jam-packed with tons of protein and fiber and will become a family favorite for sure!

CRACK SALSA RECIPE

WHATCHU NEED:

  • 1/2 cup APPLE CIDER VINEGAR (NOT with mother, see note below)

  • 1/2 cup GRAPE SEED OIL (Do NOT use any other kind of oil)

  • 1/2 cup GRANULATED STEVIA OR 1/2 cup regular sugar

  • 1 can BLACK BEANS, Drained AND Rinsed!

  • 1 can PINTO BEANS, Drained AND Rinsed!

  • 1 can DARK KIDNEY BEANS, Drained AND Rinsed!

  • 1 can GARBANZO BEANS (chick peas), Drained AND Rinsed!

  • 1 can WHITE SHOE-PEG CORN, Drained

  • 1 can DICED TOMATOES (I use petite diced), Drained AND Rinsed!

  • 1 GREEN PEPPER, Finely Chopped

  • 1/2 RED ONION, Finely Chopped

Notes:

1. You must use grapeseed oil. I've tried it with other oils and it's completely different. The grapeseed oil is definitely the abracadabra ingredient in this dish.

2. I would recommend sticking to regular apple cider vinegar. Bragg ACV, IMO, is too strong of a taste for this recipe.

 

WHATCHU DO:

1. Boil vinegar, grape seed oil, and stevia/sugar until the stevia/sugar is completely dissolved. Set aside to cool.

The grape seed oil is green. Yup, you read that right. You should also know that once your vinegar mixture boils, it will stink. Yup, you read that right too. Don't worry, I know it won't seem like it when you smell it but you are making the magic happen. Trust me... you just gotta follow through.

2. Drain AND rinse all of the beans, the corn, and the diced tomatoes.

3. Mix all ingredients with the cooled liquid.

4. Marinate 8 hrs or overnight in fridge (*IMPORTANT STEP!). The flavors keep getting better as the days go by! If possible, mix a few times while marinating (not necessary though). If you're pressed for time, you can eat this immediately after making it and it will still be delicious. However, it definitely tastes even better once the beans really start to soak up the juices.

5. Store in fridge.

TIP:

I serve this salsa with Tostitos Multigrain Scoops. I'm not sure why the multigrain scoops taste so much better to everyone than the regular scoops, but they just do. The flavors mix perfectly together. But you could try both and choose for yourself.

I eat my crack salsa without the scoops. I eat mine with a spoon :) It's delicious all on it's own without the scoops. If you can stick to just a serving amount of scoops, then go for it. But if you want to cut calories and refrain from eating the processed scoops, simply eat it by itself.

You can also change this recipe up to tailor it to your specific preferences. You can use red peppers, yellow peppers, green onions, fresh tomatoes, etc.

Whatever you put in there, prepare to have a party in your mouth!
