Ok, totally wasn't planning on posting a recipe this morning but I just had to! I made these 2-ingredient banana pancakes this morning and I could NOT believe how yummy they were!

Fact about me... I friggin LOVE pancakes. I mean REALLY love them. It's one of my Fatty McFat Fat foods that I could roll around in as I oink, snort, and giggle while I inhale them like I'm getting paid. I'm pretty sure I would accept a marriage proposal from one if that were somehow possible. Ya, it's THAT bad.

Okay, it should be said now before we go any further that if you're expecting these to taste like a big 'ole stack of flapjacks at IHOP, you need to bring shit down a notch. It doesn't taste like that.

BUT, if you're like me and you eat healthy, stay away from naughty foods, and wish to God you could have some pancakes on a lazy weekend morning, then hell... you stumbled onto the right blog!

Honestly, these are good enough to eat plain but I'm not gonna lie, if you drizzle these suckers with some pure maple syrup... OMG Hell yes.

Make sure you are in fact using PURE MAPLE SYRUP. Most store brand syrups are synthetic syrups made up completely of high fructose corn syrup, artificial flavoring, caramel coloring, and loads of chemicals. And the corn syrup is mostly likely made from GMO corn. So spend the extra couple bucks and buy pure maple syrup. There should only be ONE ingredient... maple syrup. Go figure.

So how did I come across these puppies? My mom called me about a month ago telling me she just made these pancakes. She told me I had to try them. Well, I didn't. I'm not sure why. I guess deep down I thought they weren't gonna taste like pancakes, so why be in a rush to try them? I figured I would at some point but until then I'd just keep it filed in my noggin.

Well, I tried them this morning and let me tell you... I'm pissed I didn't make them sooner! I should've listened to my mom! Ugh, that could also be said for the entire span of my teens and 20's... but that's a whole different kind of blog post, lol.

2 INGREDIENT BANANA PANCAKES RECIPE

MAKES 6 REGULAR-SIZED PANCAKES

WHATCHU NEED:

  • 2 EGGS

  • 1 MASHED BANANA (VERY ripe)

  • GRIDDLE (or a very large skillet)

*Optional: You could also add 1 tsp of any type of preferred extract for extra flavor. I used 1 tsp of pure vanilla extract for extra flavor.

WHATCHU DO:

1. Mash banana very well and blend with eggs. You can use a blender or food processor but I just mixed by hand.

2. Heat skillet or griddle and mist with cooking spray. I used my big griddle which worked PERFECTLY!.

3. Cook pancakes until they're golden brown and then flip to cook the other sides.

4. Serve plain or with pure maple syrup.

YUMMY!

Note:

My mom made hers in a skillet and could only make them a silver dollar size. I used my griddle so that I could make them the size of regular pancakes. I love my griddle! They taste the same though so either way you win!
