I'm about to become your best friend. Well actually if we're being realistic, it's probably this fudge that's about to become your best friend... but either way you're going to love me forever. 

This stuff is so yummy, you'll never believe it's healthy. NEVER! 

I normally don't condone love affairs with food. I used to do it all the time before I lost my weight and it always got me in deep trouble. But I will not fault you for marrying this fudge because I too have made my vows. But learn from my mistakes, skip the white dress and just wear a bib. Believe me when I tell you, you won't be able to put this shit down. My whole house has been walking around with chocolate fingers for the past few weeks :)

But it's okay! It's actually good for you!

With the holidays coming up, it would be the perfect goodie to have in the house for guests or to bring to a gathering. Believe me, no one will have any idea that it's not regular fudge. It tastes as unhealthy as they come! The chocolate is so smooth, it melts in your mouth instantly. The walnuts give it that wonderful soft crunch that only walnuts can do. The coconut flakes give it an amazing texture. It all just blends into a giant mouthful of happy.

I've made nine batches in the last week. Okay hold on, before you think I've gone completely off the deep end (Well you're a little late on that anyway, that happened years ago), you should know that all nine batches weren't for my house alone. I sent two batches out of state to my brother and have given a lot away to friends and family. I even brought some to the hair salon when I got my hair done last week.

Now I'm not gonna lie and try to tell you that some of this fudge hasn't hit my belly every day, but no matter how yummy and healthy it is, you still have to maintain some control. But oh my dear Lord is this stuff delicious!

There is absolutely NO refined sugar in this fudge. The only little bit of natural sugar is from the honey and with each piece of fudge only having 2 grams of sugar, we're talking practically sugar-free here!

The only fats in this fudge are THE GOOD FATS (coconut oil, coconut milk, and walnuts). These are the fats that our bodies actually need and actually aid in weight loss

Something else that needs mentioning. Even though this fudge has three coconut ingredients (the coconut oil, coconut milk, and unsweetened coconut flakes), coconut surprisingly is not the main flavor. The chocolate is definitely the main flavor. The creamy, silky smooth, melt in your mouth, to-die-for chocolate flavor... Sorry, I just got lost there for a second.

So ya, back to the coconut. My husband, well... he hates coconut. I am not exaggerating, the man will not bring anything to his lips that has any coconut in it at all. He downright refuses. I personally have slight trust issues with anyone who doesn't like the taste of coconut, but I digress. 

When I was in the kitchen trying to get this recipe right, I didn't bother him (he's usually my taste tester). But when I finally felt like I got it perfect, I wanted him to try it. He asked what was in it. Ugh, I had to tell him the truth. 

Needless to say, when I told him there was not one but three coconut products in it, he instantly got this look on his face like I was asking him to go eat a dog pile out in the yard. I gave him one of those famous wifely one-eyebrow-arched looks (you know, the kind every husband has to yield to in order to avoid pure hell for the rest of the day) and he hesitantly took a bite. Then he took another bite... and another. His face formed into his signature crooked, mischievous grin where his eyes sparkle (one of the things that made me fall in love with him) and he said, "OMG, that's really good. Really, really good."

I knew if I could get his stamp of approval, The Ultimate Coconut Hater of the Universe, then I was onto something.

There are definitely coconut undertones to the fudge and you can taste coconut in there but the creamy chocolate and the walnuts are the front-runners.

Walnuts meld so great with fudge because of their texture and taste that they provide, but if there's a nut allergy in your house or you just don't like nuts, you could definitely make this fudge just as directed but without the nuts.

Chocolate Walnut Fudge Recipe

Makes approximately 54 pieces 3/4" squares

*This recipe requires an 8" x 4" loaf pan.

WHATCHU NEED:

NOTES:

1. If you would like to make a double batch of fudge simply double the recipe and use an 8" x 8" square pan. I'm thinking if you don't make a double batch the first time, you will be the second time ;)

2. Make sure you buy organic coconut oil. If you want to get the most for your money, buy your coconut oil at a large warehouse retailer like Sam's Club or Costco. Notice the behemoth jar in the pic below that I purchased at Sam's Club. It's also available on Amazon here for about the same price as Sam's.

3. The coconut milk that this recipe calls for is the pure coconut milk that comes in a can, NOT the coconut milk you find in cartons in the milk aisle.

4. Unsweetened coconut flakes are not usually available in the regular grocery stores (at least not around where I live anyway). I get mine at a local nature store. You can opt to use the sweetened coconut flakes if you want but remember those flakes are coated with refined sugar and your fudge will have more sugar in it and be less healthy... but still much healthier than regular fudge.

Ok, are you ready to make this magic?

 

WHATCHU DO:

1. Melt coconut oil in microwave for 10 seconds at a time until oil is completely melted (Should only take 2-3 times).

2. Add cocoa and mix by hand until blended.

3. Add the next 6 ingredients (All except for the additional 1/4 cup of walnuts) and mix well by hand.

4. Line a 8" x 4" loaf pan with parchment paper.   

It'll want to fight you and not stay inside pan. It'll stay put once you pour your mixture into it.

5. Pour fudge mixture into loaf pan and put in refrigerator uncovered for approximately 50-60 minutes.

6. Take out of the fridge and sprinkle with the additional 1/4 cup of walnuts evenly over the fudge. With your hands, press the nuts into the top of the fudge.  

This is what your fudge will look like after being in the fridge for about an hour.

Just press hard enough where the nuts are digging into the fudge but still on top.

7. Store the uncovered fudge back into the fridge until fully hardened and ready to cut (approximately another 1-2 hours).

*You do NOT have to wait the initial hour to sprinkle the additional walnuts on top of the fudge but if you do it right away, the nuts will sink into the chocolate and you won't be able to see them when the fudge is done. 

8. Remove fudge from the fridge and lift the parchment paper out of the loaf pan. Straighten out the parchment paper and cut the fudge right onto the paper.

This is some serious easy clean up. Just simply put your loaf pan right back in your cupboard. No washing dishes!

Here is a single batch's yield (cut into 3/4" squares).

Honestly though, the smaller pieces seem to be perfect. There is so much rich flavor in this fudge that just a little bite is just right!

9. Store fudge in the refrigerator in a sealed container. Will keep for 7-9 days. 

*This is a double batch worth of fudge. Over 100 pieces, baby!
