Hear me now... You need to make this shit! OMG it is amazing! I can't stop. 

I (and now you) have my 12 year old daughter, Gia, to thank for this dish. You see, for some reason Gia has been obsessed with avocados lately. I've been buying the big bags of them at Sam's Club to keep up with her habit so every time I go into the kitchen they're staring at me. I have to admit Gia's recent bout with them has stirred a mini-obsession of my own. I had forgotten how much I really do love avocados. My nine year old can take them or leave them and my husband, Jay, has flat out refused to even taste one for the past 17 years.

Let me tell you, the hubs has come a looong way since I switched to a healthy lifestyle eight years ago. He has given lots of dishes a try. Even ones with vegetables in them! But he has a threshold. Apparently the avocado is where shit stops for him. He says he doesn't like the look of it. I like to remind him that a package of Angus ground beef looks like a pile of brains, yet he'll knock over toddlers and the elderly to get to a big juicy burger. Okay, maybe he wouldn't go that far. Well... it would depend on if he skipped lunch or not.

I have learned not to push him to try foods. Hahaha! Hold up. That is a total lie. I just re-read that first sentence and honestly laughed out loud! Then I was going to take it out and thought screw it, I'm leaving it in! Let me edit that first sentence without removing it. The correct way to say it would be this... I have learned not to push him to try foods to the point where I threaten him with bodily harm (like I used to). I absolutely still hound him all the time. But I've taken it down a notch or two. In my defense, I know more than him, lol. You see, he has shut himself off to the amazing tastes of fruits and veggies. He has no idea about all the parties in his mouth that he's been missing. Okay, that sounded gross and dirty but I swear it wasn't meant to be!

One of our favorite foods in our house is chicken salad. I've always made my chicken salad with grapes because I love how the flavors compliment each other. My family loves it too. It's a fan favorite. Jay especially loves it. Soooo, when I decided to add avocado to my chicken salad I thought maybe, just maybe, I could get that handsome son of a bitch to taste it.

BTW, I'm using son of a bitch as a term of an endearment. You don't even want to know some of the others I have for him. Or do you? I honestly don't know how he puts up with me. He calls me babe, baby girl, and sweetheart. I call him assmunch and effer. But I swear it's all said with love. NPI ;)

Okay back to my avocado sitch. So I asked Jay to try my Avocado and Grape Chicken Salad and he cocked his head and said, "But it's green." Hahaha. After I gave him a sticker and a pat on the head for knowing his colors, I shoved it in his friggin mouth. I always know when he likes something that I've forced him to taste because he gets this particular smirk on his face. He won't verbally admit he loves it because that would be admitting he was wrong and I was right. I don't even blame him. Because if I was wrong as much as him, I'd be embarrassed too. Hehe. So instead of acknowledging that his wife was right once again, he'll start eating in an exaggerated fashion with that shit-eating smirk of his still going strong in between bites. Damn him and that devilish sexy grin. It gets me every time.

Needless to say, he asked for a second sandwich. I got a thumbs up from everyone, even my picky nine year old, Jossy. Now I knew Gia would like it because that child is to the point where she might actually have to go to avocado rehab. And ever since I started making this recipe, I'm not far behind her. I've been eating this shit for all three meals. I can't stop. I wonder if there's a BOGO deal at The Avocado Treatment Facility. 

Trust me, as soon as you taste this stuff, you're gonna be right there with us at the rehab center. We'll save you a seat at our table.

This is my favorite way to eat this magical stuff.

Omg this chicken salad with these blue corn chips is beyond words. I'm telling you it's unbelievable! My hubs and kids prefer eating sandwiches, but I can't eat gluten because it messes with me. So I either eat mine solo or with gluten free blue chips. 

Okay so the above pic shows the perfect amount of chicken salad to meld flavors with the tasty crunch of the chip. However, my hoggish ass can't stick to 'perfect amounts' when it comes to this deliciousness. I go all the way. This next pic is really what happens up in my piece. 

You can barely see the chip! Don't judge me. Until you taste this crack for yourself, I don't want to see you shaking your head.

It's a good thing this shit is healthy. 

You need to try this. It'll be your new favorite meal. If my avocado-hating hubs asks for seconds, then anyone who actually likes avocado will do cartwheels over this shiz. Besides, Gia and I need some company in rehab. ;)

These are the blue chips that I eat...

I can't vouch for any others since this is the only brand I'll buy because I love them so much! They are delicious all by themselves but with this chicken salad? Fuhgeddaboudit.

Before I go into the recipe, I wanted to show you a ridiculously adorable Halloween meal that Jossy and I came up with. I made a couple of changes to this very same chicken salad that I'm talking to you about today so that we could bring Frankenstein back to life! There's not many truly healthy Halloween treats out there for the kids and this fits the bill. So go ahead and give them something so fun and delicious that they'll have no idea that they're eating something good for them!

MAKES 8 SERVINGS

Printable Recipe

WHATCHU NEED:

  • 3 cups cooked and shredded CHICKEN (about 1 1/2 large boneless skinless chicken breasts)

  • 1 AVOCADO (1/4 avocado reserved)

  • 1 cup sliced GRAPES (the sweeter the better!)

  • 1/4 cup PLAIN GREEK YOGURT

  • 1/4 cup LIGHT MIRACLE WHIP (or light mayo if preferred)

  • 1/4 cup diced ONIONS

  • 1/4 cup diced CELERY

  • BLENDER or FOOD PROCESSOR

WHATCHU DO:

1. Blend the plain Greek yogurt, light miracle whip, and 3/4 of your avocado in a blender or FP.

Note:

You'll be dicing the remaining 1/4 of your avocado and folding it into your chicken salad as your final step.

I like mine a little lumpy so I don't puree it until it's super smooth and well mixed. But you certainly can if you prefer it more creamy. I mix it just enough to blend the ingredients.

2. Add your shredded chicken and mix.

Note:

I'm sure everyone has their own way of baking chicken. However, I bake my skinless boneless chicken breasts at 400 degrees for 30-35 minutes. They come out perfect every time.

Yes, it will be green! It kinda freaked my hubs out, but once I shoved some in his mouth he was over it. Hehe

3. Add your onions and celery. Mix well.

4. Fold in the reserved 1/4 avocado (diced) and the sliced grapes.

I cut my grapes lengthwise and then slice them. 

5. ENJOY!
