When I got my first apartment right out of college, I decided to turn a new leaf and act more grown up. I wanted to put all the partying behind me and do more grown up things. I just started my first professional job, had a closet full of professional clothes, and felt like it was time to finally start adulting. So I made an actual list called, "Grown Up Shit To Do List."

I'm not joking. This list was my new project. I figured what better way to be a real grown up than to start acting like one. Real grown ups made lists, right? 

This list was my ticket to maturity. Oh yeah, baby, I was on my way to enlightenment and self-actualization. Do you want to know what Number 3 on my list was? Oh, it's some real deep stuff.

Oh how young brains work.

Did any of you keep stuff like this from your youth too? I encourage you to rifle through those dusty bins. It's a good laugh! Dear Lord.

Before I talk a little about Number 3, can I just point out Number 8 for a second? If that doesn't show my age, I don't know what will. Today's generation has never even heard of Blockbusters!

I had remembered writing this list; however, I did not remember writing Number 3. I nearly pissed my pants when I read that... which actually isn't that hard to do after pushing a couple humans out of my body. Damn kids.

But seriously, how on earth did Brussels sprouts make the list? 

Too bad we can't just shove Brussels sprouts down all the throats of the immature douchebags out there and make the world a better place. What a simple solution that would be... and one that's high in vitamin C too.

I did indeed try Brussels sprouts soon after the creation of my life-changing (and hysterical) to do list. Not sure why I thought it was the preferred vegetable amongst adults. I do know as a kid I always thought brussels sprouts were gross. I mean I never tasted them, but they just looked like they would taste too vegetable-ly to me. Yeah, I stuck to veggies like french fries and candied carrots. That was more my style.

When I tried the Brussels sprouts, I loved them. I'm not sure if I loved them because I actually loved them or if I just thought they were helping me be a grown up. Either way, I became obsessed. I was eating them all the time. Then after eating them everyday for weeks on end, I kind of overdosed on them. I started to hate them. I tend to do this with foods. In fact I haven't been able to eat salmon for about a year now. I became obsessed with salmon and was eating it like my life depended on it for months on end. I still can't even look at it. I'm not sure if other people do this or it's just one more thing that makes me a weirdo. 

So for many years I couldn't look at Brussels sprouts. I'm talkin' for like over a decade. We've been friends again for a while now. Actually, lately I've been a little obsessed with them again. It's not out of control. Yet. We'll see what happens. I'm hoping I can be a genuine adult this time around with my vegetables. Because come on, let's get real here, there isn't anything that says 'Grown Up Shit' more than eating Brussels sprouts responsibly. 

Before I give you this recipe, I would like to let everyone know that I've done a lot of growing up in the last 17 years and have come a long way since making my grown up list when I was still wet behind the ears.

Just kidding.

I still have no friggin' clue what I'm doing.

The only thing I can tell you for sure is that these Honey Brussels Sprouts are delicious. And I'm totally okay with eating them until I drive myself right smack into another Brussels sprouts overdose.

Honey Brussel Sprouts

Makes 3 Servings

(Printable Recipe)

WHATCHU NEED:

*Be sure you are in fact buying real honey! Over 70% of the honey on store shelves is fake. Raw, organic honey will look cloudy and is solid at room temperature. Raw, organic honey is anti-viral, anti-fungal, and anti-bacterial and is one of the most healing and healthy foods on the planet. But the fake stuff is just corn syrup, artificial sweeteners, and has no nutritional properties.

Makuna Honey is considered to be the healthiest honey available. It's actually so potent that it's considered to be of a medicinal grade.

WHATCHU DO:

1. Cut the end buds off of each brussels sprout and then peel off and discard the first layer of leaves.

2. Then cut each brussels sprout in half lengthwise.

3. Put halved sprouts in a medium-large bowl and mix with olive oil, 1 teaspoon of honey, and salt.

4. Line a baking sheet with parchment paper and arrange brussels sprouts in a single layer on the sheet.

5. Roast for 20-25 minutes at 425 degrees.

6. Put roasted brussels sprouts back in bowl and mix with balsamic vinegar and the remaining 2 teaspoons of honey.

Tip:

When I first made this recipe, I found out the hard way that I digest brussels sprouts much differently in my 40s than I did in my 20s. If you get gassy and bloated after eating foods like brussels sprouts (as I apparently do now), I would suggest chewing a couple Beano tablets before eating.

OR

Maybe you could just not eat three servings in one sitting like I did. I didn't have brussels sprouts for like 14 years and then I ate a giant bowlful of them at 6:30am. Not smart.
